For the exterior, with a 5/8" mud ring, I'm guessing I need to cut out a 4"x4" square in the exterior sheathing, and then mount the box flush, so that the mud ring will protrude 5/8" from the surface of the sheathing, and the stucco will again cover the face of the box and seal up around the perimeter of the mud ring opening. It sounds to me like the caulk is meant to prevent water from getting into the wall, not to prevent water from entering the electrical box.
